Let your steaks come to room temperature, heat up the oven to 500. Put a cast iron skillet in the oven to let it heat up. While it's heating up, rub the steaks with a mixture of kosher salt, black pepper, cayenne pepper, and garlic powder. Put the skillet on a burner on high and let it heat up for a few more minutes. Rub a little olive oil on one side of the steaks.
Sear the steaks for 1.5 - 2 minutes, then flip with tongs and sear for another 1.5 - 2 min. Then put the skillet in the oven under the broiler for 5-6 minutes for medium rare, 7-8 minutes for medium. This is if the steaks are 1.5 inches thick - sear and broil for less if your steaks are thinner or butterflied.

Although the few bits of dark meat I tried to do the same way were way chewy.
The legs, which may be too tough to deal with, are in the freezer. I'll tackle those later.
