Mmmmm... pancake puffs look nummy. And the photo itself is great - looks like a advert.

My turkey adventures continue - yesterday in a cooking fit the gf and I used the last of it with:

- turkey salad with garlic chives
- a sort of creamed minced turkey sauce with cream, romano, herbs and wine. We served it over quinoa and fresh asparagus - it was super good.
- a mincemeat pie

The reason for the chopped/minced nature of the meat was that we were down to predominantly dark meat and a little over cooked white meat - both of which were a bit dry.

The mincemeat pie was my creation - we had marinated some thighs in cider and cider vinegar, thyme, coriander, cinnamon and honey. and the result was a meat that just tasted like it belonged in a mincemeat pie. Which neither of us had ever made, or even eaten. But we faked it well - added some dried apples, cherries and raisins soaked in orange juice, honey, a bit of balsamic vinegar, a little clove, more coriander and sugar. We minced up the turkey, stirred it all together and added it to a (I blush in shame) store made pie crust (I don't do pastry and the gf wasn't up for making her scrumptious homemade pie crust).

Right before serving we splashed some brandy over the top, which livened it up a bit. I wish we had had some citron or candied citrus to add, but alas, we did not. My mother was over for Mothers Day, and thought that a nice whipped cream would be good with it, but the gf said she wasn't sure she could handle the concept of turkey with whipped cream on top. :)

At anyrate - odd but good. Sort of a brunchy dish.

Had a couple friends over last night and whipped up a dinner that was delicious and still light enough that we could eat it without feeling sick in this crazy heat. I made...

Cobb salad with spinach and mixed greens (courtesy of Mrs. Leaf's dad's awesome garden), red onion, grape tomatoes, avocado, grilled halloumi (my new favorite cheese that only shows up at my co-op once in a blue moon), chickpeas, and a little bit of bacon. With honey mustard dressing.

Garlic bread with some thyme and oregano from the pots out back.

And (this is the one I am really proud of because I made it up and it was gooooooooooood!) cucumber rosewater sorbet - super refreshing and barely sweet.

so i'm making dinner tomorrow night for my special lady friend and i need some help with a vegetable side dish. i'm making cornish game hens with herbed butter and garlic (and probably a little lemon to give it a fresh zing) and some rosemary and garlic roasted potatoes. now, i need a green vegetable dish (she likes to have a green veggie with every meal). i've narrowed it down to green beans or asparagus. i just don't know what to do with either of them (normally i'd just steam them but that seems so boring for a romantic dinner).

so, help a kitten out and give me some recipe suggestions, please? here's the catch... she keeps semi-kosher, so i can't use bacon (mmm bacon and green beans) or cheese of any kind (since we're having meat).

ideas? suggestions? anyone? bueller?

ETA: i'm not that great of a cook. i can make all of five things (this meal being one of them... and the only remotely kosher). i'm a pretty excellent baker, however, so the girl will finally be getting my famous (from scratch!) cream puffs that she's been begging for since we met.

Mmmm....bacon and green beans, indeed! You can do very much the same thing, only instead of bacon, just blanch the beans (4 minutes in boiling water followed by a dunk in ice water...you can do this the day before to save time). Get a saute pan pretty hot, add a healthy glug of olive oil, salt, pepper, chopped shallots and garlic, add the pre-cooked beans, toss 'em in the pan until they're heated through, and you're done.

Yup - exactly what dline said. Don't panic about making beans fancy - if the beans are good they don't need a lot extra. Just don't cook them into mushy oblivion - the suggestion to blanch them (yes, for only 4 minutes) and then just sautee them enough to heat them up is a good one.

Also, don't put down steaming - you could do that and have it be perfect. Simple flavors are good in contrast with rich, flavorful dishes. Again, start with good, fresh beans ("filet beans", also called "haricot vert" <-- green bean in french..., are tender and usually just about stringless) and don't overcook them. Just a dash of salt and some lemon wedges served with them for fresh squeeeeeezin'..... mmmmm.

hmmm... you could add a little dill to that if you like.
